We source our Organic Costa Rican coffee from a small family-owned farm called Las Lajas. Nestled against the looming Poas volcano, sits the small town of Sabanilla de Alajuela where the Chacon family operates the farm and the mill.
The Las Lajas farm has been in the Chacón family since the 1930’s and is owned and operated by Oscar and his wife Francisca. It has been certified organic since 2000. Las Lajas is one of the few farms left in Costa Rica that produce certified organic coffee. As a matter of fact, the farm produces an estimated 33% of Costa Rica’s total organic coffee production!

Las Lajas farm is a family patrimony, Oscar’s dad left them a heritage and a legacy, his dad always produced organically, even if it was not organic certified. Once his dad wasn’t able to work the farm, Oscar and Francisca took over and back then started implementing non-organic techniques in the farm. When his dad saw this, he told Oscar that instead of walking forward, they were walking backwards, meaning that using chemicals in the farm they were damaging it. One of Oscar’s dad wishes before passing away was that he wanted Oscar and his family to work the farm organically. Since then, Oscar and Francisca have ensured this happens, they went back to farming organically and haven’t stopped since then. They kept the legacy and kept doing good to the environment and the family.
